
02 May Onion, Tomato & Fennel Bread
The flavour of fennel in this bread pairs perfectly with onion and tomato. You can serve it alongside with any type soup for a delicious lunch.
Ingredients:
4-5 loaves
1 litre warm water
1 oz fresh caked yeast
1 tbsp good olive oil
1 ½ tbsp salt
¼ cup ground fennel seeds (coarse grind)
1 medium diced red or white onion
8 oz tomato paste (the redder the better)
2 ¼ lbs white flour
¾ lb of whole wheat flour
Directions:
Make dough very wet and sticky. Let rise till double. Turn out on the heavy floured table.
Place on baking pan and bake in 500F of C until brown and crispy. Cool and cover
