Flank Steak with Tomato Salsa

The flank steak is a beef steak cut from the abdominal muscles or lower chest of the cow. Although very tasty on its own, a flank steak is best when it is marinated to soften. The flank is a very juicy piece and today we will be presenting a delicious tasty recipe rich in proteins.

Serves 6

Marinade

1 kilo Flank steak

Juice of 2 limes

3 tbsp extra virgin olive oil

1 Sliced red onion

1 Bunch coriander, coarsely chopped

3 cloves minced garlic

1 tbsp honey

Salsa

3 Vine Ripe Tomatoes, cored & diced

Half bunch chopped coriander

Juice 1 lime

Half red onion, diced finely

Chopped red chilli to taste

2 tbsp extra virgin olive oil

Sea salt & pepper to tastes

  1. Marinate flank steak for 6 hours in above marinade.
  2. Dice tomatoes, add all the above ingredients and mix thoroughly.
  3. Serve with barbeque flank steak.
