Apple Calvados Cake

This recipe is improved by the use Calvados to enhance the flavour in the cake.

Calvados, is a Normandy cider-based brandy from Northwestern France. This cake is so rich in flavour, aromatic and can be served accompanied by a cup of tea or coffee.

Pastry

1 ½ cups vegetable oil

2 cups sugar

3 eggs

2 cups sifted flour

1 cup brown flour

2 teaspoon cinnamon

1 teaspoon baking soda

1 teaspoon salt

1 ¼ cups walnuts

3 ¼ cups apples

3 tablespoons calvados

Beat the oil and sugar. Add eggs and rest of ingredients, and cook at 325c for 45 mins.

Glaze

2 tablespoons of butter

2 tablespoons brown sugar

4 tablespoons white sugar

2 tablespoons cream

6 tablespoons O.J

3 tablespoons calvados

Melt butter, stir in sugar and rest of the ingredients, and bring to the boil. Cook for 45 mins
